Lime Rickey

The original version of the Rickey, invented in the 1800s, was called the Joe Rickie and was served as a highball made with bourbon, lime juice, and soda water with zero added sugar. The Rickey catapulted to fame when the bourbon was swapped out for gin. Let's try another riff! Our non-traditional version adds sweetener, mezcal, and Makrut Limepop for a long, tall thirst-quencher.


oz mezcal
.5 oz
 Makrut Limepop
3/4 oz lime juice
3/4 oz simple syrup
club soda


    Combine all ingredients in a cocktail shaker with 4-5 ice cubes and shake hard for 5 seconds.
    Strain into a chilled highball glass.
    Add ice and garnish with a lime wedge.
